This refreshing zesty side dish is a crowd pleaser for the summer months with our New World Chili spice blend. Depending on the fruits and vegetables that are in season, this recipe is easy to adjust to accomodate the freshest ingredients. We sometimes like to add fresh mangos to add a hint of sweetness while maintaining the Low FODMAP status.
Ingredients

1 can (15 oz rinsed and drained) Seasoned Black-Eyed Peas

1 can (15 oz rinsed and drained) Black Beans

¾ cup Sweet Corn

½ cup chopped Scallion (Green tops only to maintain Low FODMAP or Red Onion

½ cup Diced Sweet Peppers (Red, Orange or Yellow)

1 ripe diced Avocado (eliminate or minimize for Low FODMAP)

3 diced Compari Tomatoes (optional)

¼ cup chopped Cilantro(Optional)

1 small chopped Jalapeno Pepper (Optional)

½ cup fresh diced Mango (Optional)

2 tsp IrieVeda New World Chili

½ cup Lemon Juice, freshly squeezed

¼ cup Olive Oil
-
½ tsp Fresh Honey (local preferred)

Salt to Taste
Directions
Combine Black Eyed Peas, Black Beans, Corn, Scallion (or red onion), Bell Peppers, Tomatoes, Avocado, Jalapeno & Cilantro in a bowl.
Whish lemon juice, olive oil, and IrieVeda New World Chili, honey and salt to make a zesty dressing.
Pour the dressing over the combined ingredients and mix well.
Chill in refrigerator until ready to serve.
Serve with tortilla chips or as a side dish
