A Pumkin muffin recipe thats sure to please just about everyone. It is Gluten-free, Vegan and Allergen Friendly.
2 tablespoons Ground Flax Eggs
6 tablespoons Water
1 ¾ cup All Purpose Gluten Free Flour
1 teaspoon Baking Soda
1 teaspoon Baking Powder
1 tablespoon IrieVeda’s Jolly Gingerbread
¾ cup Brown Sugar
¼ teaspoon Salt
1 cup Pumpkin Puree
½ cup Melted Coconut Oil
1 teaspoon Pure Vanilla
Preheat oven to 350F. Grease and Flour baking cups or use liners.
Whisk together ground flax seeds and water. Set aside to thicken.
In a large bowl combine pumpkin puree, coconut oil, vanilla and flax eggs.
Combine Flour, Baking Powder, Baking Soda , IrieVeda’s Jolly Gingerbread, Sugar and Salt. Gradually sift dry ingredients into wet ingredients, while stirring to combine.
Divide batter into approximately 12 muffin cups.
Bake for 20 minutes. Cool and Enjoy!
Insert a toothpick after 20 minutes to check for doneness.
Store in a airtight container.
